Grilled Maple-Dijon Pork Chops
Bagel-Spiced Green Beans & Mashed Potatoes
Our maple-Dijon vinaigrette is amazingly versatile, and here it hits the spot on pork chops barbecued to tenderness. Mashed potatoes get the luxury treatment from sour cream and scallions, while green beans roast in our Bagel Shop spice blend. Instant fam fave!

- 45ml Maple-Dijon vinaigrette
- 43ml Sour cream
- 8g Bagel Shop spices (sesame seeds, poppy seeds, onion, garlic)

You will need:
Medium pot
Oil
Parchment paper
Salt & pepper (S&P)
Sheet pan

BBQ (or pan)

Preparation

Start the mash
- Preheat the oven to 450°F. Heat the BBQ on high (or pan on medium-high), making sure to oil the grill first.
- Quarter the potatoes. Place in a medium pot and cover with salted water.
- Bring to a boil, 14 to 18 min., until tender.
- Reserving ½ cup cooking water, drain and return to the pot.
- Off the heat, add the sour cream and 2 tbsp butter.
- Mash, gradually adding the reserved cooking water until you achieve your desired consistency; season with S&P.

Mise en place
- Meanwhile, remove the stem ends of the green beans.
- Thinly slice the scallions crosswise.
- Pat the pork dry; season with S&P.
- In a shallow bowl, combine the pork and vinaigrette.

Roast the green beans
- On a lined sheet pan, toss the green beans with a drizzle of oil, the spices and S&P.
- Roast, 5 to 8 min., until crisp-tender.

Grill the pork
- Add the pork* to the BBQ (or pan) and grill, 3 to 5 min. per side, until cooked through.
- Transfer to a cutting board and let rest before slicing.

Finish the mash
- To the pot of mash, add ½ the scallions; stir well.

Plate your dish
- Divide the mash, green beans and pork between your plates.
- Garnish with the remaining scallions. Bon appétit!
*Health Canada recommends cooking pork to a minimum internal temperature of 71°C.
