- 250g Canadian-raised ground chorizo pork sausage meat
- 225g Baby potatoes
- 100g Nantes carrots
- 1 Onion (or shallot)
- 3 Garlic cloves
- 2 Celery stalks
- 540ml Lentils (canned)
- 150g Green peas
- 45ml Tomato paste
- 12g Chicken demi-glace
- 3g Smoked paprika

Preparation

Cook the chorizo
- In a large, high-sided pan, heat a generous drizzle of oil on medium-high.
- Add the chorizo* and cook, breaking up the meat, 4 to 6 min., until browned and cooked through.
- Transfer to a bowl, leaving any browned bits in the pan. Reserve the pan.

Mise en place
- Meanwhile, medium-dice the potatoes.
- Small-dice the celery.
- Halve, peel and small-dice the onion.
- Halve the carrots lengthwise, thinly slice crosswise.
- Mince the garlic.
- Drain and rinse the lentils.

Start the stew
- Heat the reserved pan on medium.
- Add the onion, carrots and celery. Sauté, scraping up any browned bits, 4 to 5 min., until beginning to soften.
- Add the garlic and smoked paprika. Sauté, 1 to 2 min., until fragrant.

Finish the stew
- To the pan, add the demi-glace, potatoes, tomato paste, chorizo, 5 cups water (double for 4 portions) and S&P; bring to a boil.
- Reduce to medium low and add the lentils.
- Cover and cook, 12 to 15 min., until the potatoes are tender.
- Add the peas and cook, stirring occasionally, 2 to 3 min., until heated through.

Plate your dish
- Divide the stew between your bowls. Bon appétit!
