Goodfood goes global! We’re travelling the world in search of culinary inspiration, and bringing you our best finds. Next stop: Spain, where the juicy fresh orange mingles with sherry vinegar and warm spices in a robust salad dotted with crumbles of goat cheese and croutons.

  • 2 Canadian-raised chicken breasts (air chilled)
  • 1 Shallot (or onion)
  • 1 Orange
  • 1 Garlic clove
  • 1 Head of curly leaf lettuce
  • 30ml Sherry vinegar
  • 25g Croutons
  • 7g Honey
  • 30g Goat cheese
  • 10g A la Plancha spices (kosher salt, garlic, sugar, red bell pepper, vinegar powder, yeast extract, green bell pepper, sunflower oil, paprika, smoked paprika, silicon dioxide, turmeric, cayenne pepper, citric acid)

Preparation

Cook the chicken

  • Zest the orange.

  • Pat the chicken dry. In a medium bowl, combine the chicken, spices, orange zest, a drizzle of oil and S&P.

  • In a medium pan, heat a drizzle of oil on medium-high.

  • Add the chicken* and cook, partially covered, 6 to 8 min. per side, until cooked through.

  • Transfer to a cutting board and let rest before slicing.

Mise en place

  • Meanwhile, mince the garlic.

  • Halve, peel and thinly slice the shallot.

  • In a small bowl, combine the shallot and vinegar.

  • Roughly chop the lettuce.

  • Cut off the top and bottom of the orange, then cut away the peel and white pith. Thinly slice, then quarter.

Make the salad

  • In a large bowl, combine the garlic, shallot and vinegar, honey, 2 tbsp oil (double for 4 portions) and S&P.

  • Add the lettuce, orange, croutons and cheese; toss well.

Plate your dish

  • Divide the salad between your plates.

  • Top with the chicken. Bon appétit!
