Ginger-Lime Ground Pork Stir-Fry
with Green Beans & String Peas over Jasmine Rice
Welcome the new year in a calm, cozy and comforting mood. For starters, you’ll cook up aromatic jasmine rice to line each bowlful. Then you’ll top it with a cushy stir-fry that’s anchored by soft morsels of browned ground pork, along with munchy contrast from tender-crisp green beans and string peas. Everything’s imbued with lingering flavours of sweet soy sauce, freshly juiced lime and sharp chopped ginger, within easy reach of chopsticks or forks.

Preparation

Cook the rice
In a medium pot, combine the rice, 3 cups water and a big pinch of salt; bring to a boil. Reduce the heat, cover and simmer, 14 to 16 min., until the rice is tender and the water has been absorbed. Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Cook the pork
Meanwhile, in a large pan, heat a generous drizzle of oil on medium-high. Add the pork*; season with the spices. Cook, breaking up the meat, 4 to 6 min., until browned and cooked through. Transfer to a bowl and reserve the pan.

Mise en place
Meanwhile, remove the stem ends of the green beans; cut crosswise into 1-inch pieces. Halve the string peas crosswise on an angle. Peel and mince the ginger. Juice the lime.

Cook the vegetables
In the reserved pan, heat a drizzle of oil on medium-high. Add the ginger, green beans and string peas. Sauté, 4 to 6 min., until beginning to soften. Add 2 tbsp water and S&P. Cook, partially covered, 2 to 3 min., until crisp-tender.

Make the stir-fry
To the pan of vegetables, add the pork, soy sauce and lime juice. Cook, stirring frequently, 1 to 2 min., until combined.

Plate your dish
Divide the rice between your bowls. Top with the stir-fry. Bon appétit!
*Health Canada recommends cooking ground pork to a minimum internal temperature of 71°C.
