Fresh Cheese Tortellini in Creamy Veggie Sauce
with Sun-Dried Tomatoes, Zucchini & Chives
Make pasta night sunny and bright with a comforting meal loaded with veggies, both small and large. Everyone in the family will find something to suit them as they dig into cheese-stuffed pasta coated in a creamy sauce. Richly coloured and textured, it’s full of little green peas mingling with chewy flecks of sun-dried tomatoes and tender morsels of zucchini. Finish with freshly sliced chives and a pat of butter for the win.

- 3 Zucchini (green, yellow or heirloom)
- 150g Green peas
- 700g Fresh three-cheese tortellini (contains lipase)
- 30ml Vegetable demi-glace
- 120ml Heavy cream
- 30g Sliced sun-dried tomatoes
- 18g Mezzogiorno spices (salt, garlic, basil, sugar, dried carrot, onion, cayenne pepper sauce, sunflower oil, oregano, fennel, chives, crushed cayenne pepper)

Preparation
Mise en place
Bring a large pot of salted water to a boil. Quarter the zucchini lengthwise; thinly slice. Mince the garlic. Thinly slice the chives.
Boil the pasta
Add the pasta to the pot of boiling water; stir gently to separate. Boil, stirring occasionally, 4 to 6 min., until al dente. Reserving 1 cup cooking water, drain and toss with a drizzle of oil to prevent sticking.
Make the sauce
Meanwhile, in a large, high-sided pan, heat a drizzle of oil on medium. Add the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the zucchini and sauté, 2 to 3 min., until tender. Add the tomatoes, peas, demi-glace, cream, ½ the reserved cooking water, the spices and S&P; bring to a boil. Reduce the heat to simmer and cook, stirring occasionally, 2 to 3 min., until thickened. Add 1 tbsp butter; stir well.
Combine the pasta
To the pan of sauce, add the pasta and 2 tbsp butter. Cook, stirring frequently, 1 to 2 min., until heated through and combined. If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.
Plate your dish
Divide the pasta between your bowls. Garnish with the chives. Bon appétit!
