The combination of melted Monterey Jack cheese and BBQ-sauced chicken connects with a knockout punch in every bite. Also in the ring: an easy salad of curly leaf lettuce and crisp apple salad tossed with our honey-Dijon vinaigrette for extra power.

  • 180ml BBQ sauce

  • 1 Pizza dough

Preparation

Start the pizza

  • Preheat the oven to 450°F.

  • Set the dough aside to come up to room temperature.

  • Halve, core and thinly slice the sweet pepper lengthwise.

  • On the back of a well-oiled sheet pan, roll or spread the dough out to a ½ inch thickness for a thick crust or ⅛ inch for a thin crust.

  • Spread with ½ the BBQ sauce, the cheese and sweet pepper.

  • Bake the pizza on the bottom rack of the oven, 16 to 20 min., until the dough is golden brown.

Mise en place

  • Meanwhile, halve, core and thinly slice the apple; toss with a splash of the vinaigrette to prevent browning.

  • Halve, peel and thinly slice the onion. Place in a bowl of ice water and let sit for at least 5 min. Drain the onion.

  • Separate the lettuce leaves; tear the leaves.

  • Pat the chicken dry and cut into 1⁄2 inch strips; season with S&P.

Cook & coat the chicken

  • In a large pan, heat a drizzle of oil on medium-high.

  • Add the chicken and remaining BBQ sauce. Cover and cook, stirring often, 4 to 6 min., until the chicken* is cooked through.

  • If the sauce seems dry, gradually add 1 to 3 tbsp water to achieve a saucy consistency.

Finish the pizza

  • When the pizza is golden brown, top with the chicken, sauce and ¾ of the onion.

Make the salad

  • In a large bowl, combine the lettuce, apple, and remaining onion and vinaigrette.

Plate your dish

  • Divide the pizza (cut into wedges) between your plates.

  • Serve the salad on the side. Bon appétit!
