Everything Bagel Chicken Caesar Salad
with Nutty Scallion Topping
Step up a classic salad with extra protein, and it’s just what you dreamed of for dinner. Our aromatic Bagel Shop seasoning showers chicken with sesame and poppy seeds. Instead of carby croutons, buttery toasted hazelnuts up the sensations, along with crispy, creamy string peas and radishes.
We will send you:
- 4 Canadian-raised chicken thighs (air chilled)
- 1 Head of lettuce
- 100g Radishes
- 1 Scallion
- 100g String peas (sugar snap peas or snow peas)
- 25g Hazelnuts
- 45ml Caesar vinaigrette
- 15ml Apple cider vinegar
- 10g Bagel Shop spices (sesame seeds, poppy seeds, onion, garlic)

Preparation
Cook the chicken
- Pat the chicken dry; season with ⅔ of the spices and S&P.
- In a large pan, heat a drizzle of oil on medium-high.
- Add the chicken* and cook, partially covered, 4 to 6 min. per side, until cooked through. Transfer to a plate.
Mise en place
- Meanwhile, roughly chop the lettuce.
- Thinly slice the radishes.
- Thinly slice the string peas lengthwise.
- Thinly slice the scallion crosswise, separating the white bottom and green top.
- Roughly chop the hazelnuts.
Make the nutty scallion topping
- In a small pan, heat a drizzle of oil on medium-high.
- Add the hazelnuts and toast, stirring often, 2 to 3 min., until lightly browned and fragrant.
- Add the white bottom of the scallion, 1 tbsp butter (double for 4 portions), the remaining spices and S&P.
- Cook, stirring often, 30 sec. to 1 min., until combined. Transfer to a small bowl.
Make the salad
- Meanwhile, in a large bowl, combine vinaigrette and vinegar.
- Add the lettuce, radishes, string peas, green top of the scallion and S&P; toss well.
Plate your dish
- Divide the salad between your plates.
- Top with the chicken and nutty scallion topping. Bon appétit!
