Melt in your mouth to the max! We’re making the creamiest, dreamiest version of this Italian-American classic by combining grated mozzarella and mayo for a killer topping, which bubbles over a layer of tomato sauce. A surefire hit with the fam.

Preparation

Boil the orzo

  • Preheat the oven to 450°F. Bring a medium pot of salted water to a boil.

  • Add the orzo and boil, 9 to 10 min., until just tender.

  • Drain and rinse.

  • Return to the pot and toss with a drizzle of oil to prevent sticking.

Prepare the chicken

  • Meanwhile, pat the chicken dry; season with the spices.

  • In a medium bowl, whisk 1 egg and S&P until smooth.

  • In a second medium bowl, combine the panko and S&P.

  • Working one at a time, coat the chicken in the egg (letting any excess drip off), then in the panko (pressing to adhere).

Cook the chicken

  • In a large, oven-safe pan, heat a thin layer of oil on medium.

  • Add the chicken and cook, 3 to 4 min. per side, until golden and partially cooked.

  • In a small bowl, combine the mayo, cheese and S&P.

  • Top the chicken* with the tomato sauce and dollops of the cheese mixture.

  • Transfer to the oven and bake, 8 to 12 min., until browned and cooked through.

  • Switch the oven to broil, 2 to 3 min., if extra colour is desired.

Roast the zucchini

  • Meanwhile, quarter the zucchini lengthwise; halve crosswise.

  • On a lined sheet pan, toss with a drizzle of oil and S&P.

  • Roast, flipping halfway, 10 to 12 min., until tender.

Plate your dish

  • Divide the orzo, zucchini and chicken (slice beforehand if desired) between your plates. Bon appétit!
