Chilean-Style Ground Beef Stew
with Baked Corn Tortilla Chips
In Chile, a meaty stew called charquicán goes back to ancient times. Pack it full of sweet pepper and carrots, give it a shot of smoky spices and serve it with corn tortilla chips that get golden and crunchy in the oven.

- 250g Canadian-raised lean ground beef
- 1 Sweet pepper
- 200g Diced carrots
- 30ml Vegetable demi-glace
- 45ml Tomato paste
- 6 Corn tortillas
- 7g Smoky Ancho spices (spices, garlic, sea salt, onion, dried tomatoes, ancho chilli pepper, red bell pepper, green bell pepper, white sesame seeds, canola oil, silicon dioxide, smoked paprika)

Preparation
Make the tortilla chips
- Preheat the oven to 425°F.
- Stack the tortillas and cut into 6 wedges.
- On a lined sheet pan, toss with a drizzle of oil and bake, flipping halfway, 9 to 12 min., until crispy.
Start the stew
- Meanwhile., in a large, high-sided pan, heat a drizzle of oil on medium-high.
- Add the carrots and sauté, 1 to 2 min., until fragrant.
- Add the beef; season with the spices and S&P.
- Cook, breaking up the meat, 2 to 3 min., until lightly browned.
- Add the tomato paste and cook, stirring often, 1 to 2 min., until dark red.
Mise en place
- Meanwhile, halve, core and medium-dice the sweet pepper.
Finish the stew
- To the pan of stew, add the sweet pepper and cook, stirring occasionally, 1 to 2 min., until combined.
- Add the demi-glace, 1 ½ cups water (double for 4 portions) and S&P; bring to a boil.
- Reduce to a simmer and cook, stirring occasionally, 3 to 5 min., until softened and the beef* is cooked through.
- If the sauce seems dry, gradually add up to ½ cup water until you achieve your desired consistency.
Plate your dish
- Divide the stew between your bowls.
- Serve the tortilla chips on the side. Bon appétit!
