Are taquitos just cute little tacos? Kinda. These wheat tortillas are jammed with tender veggies and rolled up—which is why they’re sometimes called flautas, like flutes. Then they’re baked to golden under a layer of cheese—which is why they’re sometimes called tacos dorados.

  • 1 Head of cauliflower
  • 398ml Black beans (canned)
  • 120g Grated mozzarella
  • 60ml Crema
  • 12 Wheat flour tortillas
  • 13g Tex-Mex Mood spices (salt, paprika, oregano, canola oil, celery seeds, garlic, onion, black pepper, Cayenne pepper, cellulose fiber, cumin, bay leaves, hickory smoke flavour)

Preparation

Mise en place

  • Preheat the oven to 450°F.

  • Remove the core of the cauliflower; roughly chop.

  • Reserving ¼ cup of the liquid, drain and rinse the black beans.

  • Thinly slice the scallion crosswise.

  • Juice the lime.

Make the filling

  • In a large pan, heat a drizzle of oil on medium-high.

  • Add the cauliflower, black beans and spices. Sauté, 2 to 3 min., until beginning to soften.

  • Add the reserved bean liquid and ¼ cup water.

  • Cook, covered, stirring occasionally and slightly mashing the beans, 5 to 7 min., until the cauliflower is tender; season with S&P.

  • If the sauce dries up, add ¼ cup water at a time until you achieve a saucy consistency.

Assemble & bake the taquitos

  • Place the tortillas on a clean work surface.

  • Top each with the filling and tightly roll up.

  • Arrange the taquitos, seam-sides down, in a large baking dish.

  • Top with the cheese.

  • Bake, 2 to 3 min., until the cheese begins to melt.

  • Switch the oven to broil, 2 to 3 min., until the cheese begins to brown.

Make the slaw

  • Meanwhile, in a large bowl, combine the lime juice, crema, a drizzle of oil and S&P.

  • Add the cabbage and ½ the scallion; toss well.

Plate your dish

  • Divide the taquitos and slaw between your plates.

  • Garnish with the remaining scallion. Bon appétit!
