Cheesy Baked Red Pesto Tortellini
with Garlic-Roasted Broccoli
Every step you take maxes out on the satisfaction of this filling pasta recipe. The real power moves: mixing sun-dried tomato pesto into tomato sauce for well rounded flavours and sprinkling grated mozzarella over the works for a bubbling broiled finish.

Preparation

Roast the broccoli
- Preheat the oven to 450°F. Bring a medium, oven-safe pot of salted water to a boil.
- Mince the garlic.
- Remove the bottom inch of the broccoli stem; peel the stem. Cut the head into long, thin florets, including the stem.
- On a lined sheet pan, toss the broccoli with a drizzle of oil and S&P.
- Roast, stirring and adding ½ the garlic halfway, 14 to 16 min., until tender.

Boil the pasta
- Meanwhile, add the pasta to the pot of boiling water; stir gently to separate.
- Boil, stirring occasionally, 4 to 6 min., until al dente.
- Reserving ½ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.
- Reserve the pot.

Make the sauce
- In the same pot, heat a drizzle of oil on medium-high.
- Add the remaining garlic and sauté, 30 sec. to 1 min., until fragrant.
- Add the tomato sauce, pesto and reserved cooking water.
- Cook, stirring often, 2 to 3 min., until beginning to thicken.

Combine & bake the pasta
- To the pot, add the pasta; stir well.
- Top with the cheese.
- Transfer to the oven and bake, 6 to 8 min., until golden brown.
- Switch the oven to broil, 2 to 3 min., if extra colour is desired.

Plate your dish
- Divide the pasta and broccoli between your plates. Bon appétit!
