Carb-Wise: Spicy Ground Pork & Eggplant Stir-Fry
with Tamarind & Red Curry over Cauliflower ‘Rice’
Wanna stir things up a little on a dark winter night? This stunner of a stir-fry will do that for ya in a mere 15 minutes. The flavour is completely captivating, courtesy of three key ingredients: spicy red curry paste, tangy tamarind and thick sweet soy (all kinds of magic make it a southeast Asian kitchen staple). Chunks of eggplant and browned ground pork create soft nibbly mouthfuls over finely grained cauliflower, a sautéed stand-in for rice.

- 120g Baby greens (baby spinach or kale)
- 200g Cauliflower ‘rice’ (chopped cauliflower)
- 2 Garlic cloves
- 1 Eggplant
- 45ml Sweet soy sauce
- 18g Red curry paste
- 15ml Tamarind paste

Preparation

Mise en place
Mince the garlic. Medium-dice the eggplant. In a small bowl, make the sauce by combining the soy sauce, curry paste (add ⅔ for medium spicy), tamarind and 3 tbsp water (double for 4 portions).

Start the stir-fry
In a large pan, heat a drizzle of oil on medium-high. Add the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the eggplant and sauté, 4 to 6 min., until beginning to brown; season with S&P.

Sauté the cauliflower rice
Meanwhile, in a medium pan, heat a drizzle of oil on medium-high. Add the cauliflower rice and sauté, 6 to 8 min., until softened; season with S&P.

Finish the stir-fry
To the pan of eggplant, add the pork*. Cook, breaking up the meat, 4 to 6 min., until browned and cooked through. Add the sauce and spinach. Cook, stirring frequently, 2 to 3 min., until glazed and wilted.

Plate your dish
Divide the cauliflower rice between your bowls. Top with the stir-fry. Bon appétit!
*Health Canada recommends cooking ground pork to a minimum internal temperature of 71°C.
