Carb-Wise: Spiced Ground Beef Middle Eastern-Style Platter
with Za’atar-Roasted Beets, Chopped Salad & Hummus
A smear of hummus makes things happen on this platter of plenty. The earthy chickpea-tahini spread provides a layer of flavour that hosts a mouth-watering collection of warmly spiced elements. There’s ground beef browned with garlic, lemon zest and a traditional za’atar blend. Beets are roasted to fork-tender in the oven with more of those spices. And finally, a chopped salad with radishes, cukes and tomato lends a crisp, refreshing, lemony note to this Middle Eastern spice affair.

Preparation

Roast the beets
Preheat the oven to 450°F. Peel and medium-dice the beets. On a lined sheet pan, toss with a drizzle of oil, ½ the za’atar and S&P. Roast, stirring halfway, 20 to 23 min., until tender.

Mise en place
Meanwhile, zest and juice the lemon. Medium-dice the radishes. Small-dice the cucumbers and tomato. Mince the garlic. In a medium bowl, combine the hummus, ½ the lemon juice and S&P.

Cook the beef
In a large pan, heat a drizzle of oil on medium-high. Add the garlic and ½ the lemon zest. Sauté, 30 sec. to 1 min., until fragrant. Add the beef*; season with the remaining za’atar and S&P. Cook, breaking up the meat, 4 to 6 min., until browned and cooked through.

Make the salad
Meanwhile, in a large bowl, combine the tomato, cucumbers, radishes, remaining lemon zest and juice, a drizzle of oil and S&P.

Plate your dish
Divide the hummus between your plates and spread out in a circular motion. Top with the beef, beets and salad. Bon appétit!
