Carb-Wise: Cozy Ground Pork & Aged Cheddar Bake
with Charred Broccoli & Brussels Sprouts
Cozy, cozy, cozy! This dish fits a winter evening like a warm glove. It’s built from tender morsels of ground pork, browned with shallot and garlic. Drop in tomato sauce and a handful of grated aged cheddar to sharpen the palate. To take the texture into interesting directions, you’ll add roasted Brussels sprouts and florets of broccoli to the pan, before opening the oven for a final bake (with a little more of that cheese, please!).

- 200g Brussels sprouts
- 15ml Minced garlic
- 200g Broccoli florets
- 1 Shallot (or onion)
- 100ml Tomato sauce
- 60g Grated aged cheddar
- 10g Garlic & Sweet Pepper spices (salt, garlic, sugar, red bell pepper, vinegar powder, green bell pepper, sunflower oil, paprika, turmeric, cayenne pepper)

Preparation

Mise en place
Preheat the oven to 450°F. Remove the root ends of the Brussels sprouts; halve lengthwise (quarter if large). Halve the broccoli (quarter if large). Halve, peel and thinly slice the shallot.

Roast the vegetables
On a lined sheet pan, toss the Brussels sprouts and broccoli with a generous drizzle of oil, ½ the spices and S&P. Arrange, cut-sides down, and roast, 14 to 16 min., until golden brown and tender.

Cook the pork
Meanwhile, in a medium, oven-safe pan, heat a drizzle of oil on medium. Add the shallot and garlic. Sauté, 1 to 2 min., until fragrant. Add the pork*; season with the remaining spices and S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through.

Coat the pork
To the pan of pork, add the tomato sauce and 4 tbsp water (double for 4 portions); bring to a boil. Reduce the heat to simmer and cook, stirring occasionally, 1 to 2 min., until slightly thickened. Add ⅓ of the cheese; stir well.

Assemble the bake & serve
Top the pork with the vegetables and remaining cheese. Transfer to the oven and bake, 1 to 2 min., until the cheese has melted. Divide the bake between your plates. Bon appétit!
