Carb-Wise: Cheesy Mexican-Spiced Pork Meatballs with Roasted Chayote
Avocado-Lime Sauce
When it comes to meatballs, you just gotta roll in whatever direction they take you. Mexico sounds about right this time of year, so give the ground pork a good dousing of warming spices before browning. They’ll start on the stovetop and finish in the oven under the broiling sun with a white cheddar topping. Serve them surrounded by roasted chayote and broccoli, over a lime-spiked avocado purée for a true awakening with every bite.

Preparation

Mise en place
Preheat the oven to 450°F. Halve the broccoli if large. Peel and medium-dice the chayote. Halve the lime; juice ½ and quarter the remaining ½.

Roast the vegetables
On a lined sheet pan, toss the broccoli and chayote with a drizzle of oil, ⅓ of the spices and S&P. Roast, stirring halfway, 14 to 18 min., until tender.

Prepare & cook the meatballs
Meanwhile, in a large bowl, combine the pork, all but a pinch of the remaining spices and S&P. Form into 8 meatballs (double for 4 portions) about the size of a golf ball. In a medium, oven-safe pan, heat a drizzle of oil on medium-high. Add the meatballs* and cook, partially covered, turning occasionally, 8 to 10 min., until browned and cooked through.

Make the avocado-lime sauce
Meanwhile, in a small bowl, combine the lime juice, avocado purée, a drizzle of oil, the remaining spices and S&P.

Broil the meatballs
Arrange the meatballs in the centre of the pan and sprinkle with the cheese. When the vegetables are tender, remove from the oven and switch the oven to broil. Transfer the meatballs to the oven and broil, 2 to 3 min., until the cheese has melted.

Plate your dish
Divide the avocado-lime sauce between your plates and spread out in a circular motion. Top with the meatballs and vegetables. Garnish with the lime wedges. Bon appétit!
