A whiff of yellow curry paste is all these beef croquettes need to travel halfway across the world. The Thai-inspired flavourings join minced garlic and fresh cilantro in small ground meat patties, which are designed to char gently and quickly on the barbecue. Beckon in a breezy feeling with a side salad that’s got moist crunch from cucumbers and sweetness from cherry tomatoes, tossed with lettuce in a lusciously thick tamari vinaigrette.

Mise en place
Heat the BBQ on high, making sure to oil the grill first. Halve the cucumbers lengthwise; thinly slice crosswise on an angle. Halve the tomatoes. Thinly slice the lettuce. Roughly chop the cilantro leaves and stems. Mince the garlic.

Prepare the croquettes
In a large bowl, combine the beef, curry paste, garlic, ½ the cilantro and S&P. Form into 8 oval patties (double for 4 portions).

Grill the croquettes
Add the croquettes* to the BBQ (or to a grill pan heated with a drizzle of oil on medium-high) and grill, turning occasionally, 8 to 12 min., until cooked through.

Make the salad
Meanwhile, in a second large bowl, combine the lettuce, cucumbers, tomatoes, ½ the remaining cilantro and the vinaigrette.

Plate your dish
Divide the salad between your bowls. Top with the croquettes. Garnish with the remaining cilantro. Bon appétit!
