Caramelized Onion & Beef Mini Meatloaves
with Mashed Potatoes, Buttery Peas & Broccoli
Meatloaves, meet your makers! Individualized portions of this family classic are just too cute to resist, for grownups and kids alike. Give the ground beef a liberal dose of our pre-prepped caramelized onions for sweet and savoury notes, along with whole-grain mustard for some spunk. A classic demands more classics, so present them with fluffy mashed potatoes, alongside bright green broccoli and peas finished with a velvety touch of butter.

Preparation

Prepare & roast the meatloaves
Preheat the oven to 450°F. Bring a medium pot of salted water to a boil. In a large bowl, combine the beef, panko, mustard, onions, ⅔ of the spices and S&P. Form into 4 small loaves*. Arrange on a lined sheet pan and roast, 15 to 18 min., until cooked through.

Boil the potatoes
Meanwhile, peel and medium-dice the potatoes. Add to the pot of boiling water and boil, 14 to 16 min., until very tender. Reserving 1 cup cooking water, drain and return to the pot.

Sauté the vegetables
Meanwhile, in a large pan, heat a drizzle of oil on medium-high. Add the broccoli (halve if large) and sauté, 5 to 7 min., until beginning to brown. Add the peas and 4 tbsp water. Sauté, 2 to 3 min., until the water has evaporated and the broccoli is tender. Add 2 tbsp butter, the remaining spices and S&P; stir well.

Make the mash
To the pot of potatoes, add 2 tbsp butter. Mash, gradually adding the reserved cooking water until you achieve your desired consistency; season with S&P.

Plate your dish
Divide the mash, vegetables and meatloaves between your plates. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
