A whiff of smoke, a hint of sweet… these chicken breasts are off to a fine start on the flavour front. And when our Sweet & Smoky Bourbon seasoning meets them, you know that sparks are sure to fly. Lay down the perfectly seared meat in juicy slices on a calorie-conscious spread that goes creative with your daily fruit and veg. Slices of mango, cool cukes, baby greens and cilantro get a spicy splash of sambal oelek vinaigrette.

  • 30ml White balsamic vinegar

Cook the chicken
Pat the chicken dry with paper towel; season with the spices and S&P. In a medium pan, heat a drizzle of oil on medium-high. Add the chicken* and cook, partially covered, 6 to 8 min. per side, until cooked through. Transfer to a cutting board and let rest for 5 min. before slicing against the grain.

Meanwhile, halve the cucumbers lengthwise; thinly slice crosswise on an angle. Peel and pit the mango; thinly slice lengthwise. Roughly chop the cilantro leaves and stems.

Make the salad
In a large bowl, combine the sambal oelek, vinegar and 3 tbsp oil (double for 4 portions). Add the baby greens, mango, cucumbers, cilantro and S&P; toss well.

Plate your dish
Divide the chicken and salad between your plates. Bon appétit!
