Come on, be a baller. There’s no easier meal than this hearty traybake, all cooked in one single pan to reduce dishes (you’re welcome). These beefy meatballs sit over a nest of low-carb veggies, including cauliflower florets and tender little butternut squash cubes that sing against the crunch of pecans thrown in at the very end. But we haven’t told you the best part! The whole dish is flavoured with our BBQ on Bourbon Street spices and your own homemade maple butter (you’re welcome again).

  • 300g Cauliflower florets
  • 200g Diced butternut squash
  • 50g Diced onions
  • 25g Pecan halves
  • 15ml Maple syrup
  • 60g Grated aged cheddar
  • 10g BBQ on Bourbon Street spices (salt, bourbon flavour, paprika, chili powder, onion, garlic, black pepper, mustard, cumin, smoked hickory flavour)

Preparation

Mise en place
Preheat the oven to 450°F. In a small bowl, microwave 2 tbsp butter (double for 4 portions), in 10 sec. increments, until softened. Add the maple syrup; stir well.

Prepare the meatballs
In a large bowl, combine the beef, cheese, ½ the onions, ½ the spices and S&P. Form into 10 meatballs (double for 4 portions) about the size of a golf ball.

Prepare the traybake
On a lined sheet pan, toss the cauliflower and squash with a drizzle of oil, the remaining spices and S&P. Add the meatballs.

Roast the traybake
Drizzle the vegetables with the maple butter. Roast the traybake, 9 to 10 min., until partially cooked. Remove from the oven, stir and add the remaining onions. Roast, 9 to 10 min., until the meatballs* are cooked through and the vegetables are lightly browned and tender. In the final 3 min., add the pecans.
