with Rice Vermicelli & Ponzu Lime Dressing

As kids in Vietnam know, bun cha is a tasty combination of grilled meat and noodles with a fragrant dipping sauce. For a home barbecue version, we’re putting ground beef and heirloom zucchini on the grill, and we’re using lemongrass for extra wow.

  • 510g Canadian-raised lean ground beef
  • 3 Heirloom zucchini
  • 150g Edamame (or green peas)
  • 30ml Hoisin sauce
  • 30g Panko
  • 15g Minced lemongrass
  • 450g Rice vermicelli
  • 60ml Ponzu lime sauce
  • 30ml Rice vinegar

Preparation

Boil the vermicelli & edamame

  • Heat the BBQ on high (or pan on medium-high), making sure to oil the grill first.

  • Bring a large pot of salted water to a boil.

  • Off the heat, add the vermicelli and edamame; stir gently to separate.

  • Cover and let sit for 3 to 5 min. until tender.

  • Drain, rinse under cold water and toss with a generous drizzle of oil to prevent sticking.

Mise en place

  • Meanwhile, halve the zucchini lengthwise; drizzle with oil and season with S&P.

  • In a small bowl, make the dressing by whisking the hoisin, ponzu, vinegar (start with ½) and 1 tbsp oil.

Prepare the patties

  • In a large bowl, combine the beef, panko, lemongrass, 1 egg and S&P.

  • Form into 8 patties.

Grill the patties & zucchini

  • Add the patties* to the BBQ (or pan) and grill, 3 to 5 min. per side, until cooked through.

  • Add the zucchini to the BBQ (or pan) and grill, 2 to 3 min. per side, until tender.

  • Transfer the zucchini to a cutting board. Once cool enough, cut into bite-size pieces.

Plate your dish

  • Divide the vermicelli and edamame between your bowls.

  • Drizzle with the dressing.

  • Top with the patties and zucchini. Bon appétit!
