Beefy Black Bean Chili
with Roasted Pepper
When you need something to stick to your ribs, this carb-wise chili has got it where it counts. It’s doubling down on proteins with ground beef and black beans, and it’s showing up for veggies with carrots and tangy roasted red pepper.

- 1 Celery stalk
- 200g Diced carrots
- 45ml Tomato paste
- 30ml Vegetable demi-glace
- 398ml Black beans (canned)
- 1 Roasted pepper
- 6g America Latina spices (garlic, salt, cumin, oregano, onion, paprika, tomato powder, ancho, red pepper, green pepper, white sesame, coriander, chili, canola oil, Cayenne pepper, cellulose fiber)

Preparation
Start the chili
- Thinly slice the celery crosswise.
- In a large, high-sided pan, heat a drizzle of oil on medium-high.
- Add the celery and carrots. Sauté, 1 to 2 min., until fragrant.
- Add the beef; season with the spices and S&P.
- Cook, breaking up the meat, 2 to 3 min., until lightly browned.
- Add the tomato paste and cook, stirring often, 1 to 2 min., until dark red.
Mise en place
- Meanwhile, drain and rinse the black beans.
- Roughly chop the roasted pepper.
Finish the chili
- To the pan, add the black beans and roasted pepper. Cook, stirring occasionally, 1 to 2 min., until combined.
- Add the demi-glace, 1 ½ cups water (double for 4 portions) and S&P; bring to a boil.
- Reduce to a simmer and cook, stirring occasionally, 6 to 8 min., until thickened and the beef* is cooked through.
- If the sauce seems dry, gradually add up to ½ cup water (double for 4 portions) until you achieve your desired consistency.
Plate your dish
- Divide the chili between your bowls. Bon appétit!
