Beef & Summer Squash Maafe
with Lime-Spritzed Cucumbers
Maafe, a homey West African stew that’s rich in peanuts, is as hearty as it gets. Not only does this version serve up a double protein punch, it also delivers seasonal veggies simmered in a sauce of coconut curry, ginger and berbere spices.

- 250g Canadian-raised lean ground beef
- 1 Onion (or shallot)
- 1 Lime
- 4 Cucumbers
- 1 Yellow zucchini
- 20g Ginger
- 60ml Coconut curry sauce
- 15ml Tomato paste
- 30g Peanut butter
- 9g The Berbere Essentials spices (paprika, salt, Cayenne pepper, cumin, fenugreek, cardamom, black pepper, turmeric, allspice, coriander seeds, cinnamon, cloves)

Preparation

Start the maafe
- Halve, peel and small-dice the onion.
- In a medium pot, heat a drizzle of oil on medium-high.
- Add the beef and onion; season with the spices and S&P.
- Cook, breaking up the meat, 3 to 4 min., until partially cooked.

Mise en place
- Meanwhile, halve the lime; juice ½ and cut the remaining ½ into 2 wedges.
- Halve the zucchini lengthwise; cut crosswise into ½ inch pieces.
- Peel and grate the ginger.
- Thinly slice the cucumbers crosswise.

Finish the maafe
- To the pot, add the ginger and tomato paste. Cook, stirring often, 30 sec. to 1 min., until fragrant and dark red.
- Add the coconut curry sauce, peanut butter, zucchini, 1 cup water (double for 4 portions) and S&P; bring to a boil.
- Reduce to a simmer and cook, stirring occasionally, 5 to 7 min., until slightly thickened and the zucchini are tender.

Dress the cucumbers
- Meanwhile, in a medium bowl, combine the cucumbers, lime juice, a drizzle of oil and S&P.

Plate your dish
- Divide the maafe between your bowls.
- Serve the cucumbers on the side.
- Garnish with the lime wedges. Bon appétit!
