Trend alert! Smash hits of the 2020s include smash burgers, smash tacos and now smash gyro. This Greek-minded food trend sees pita bread spread to the outer rim with brightly seasoned ground beef. Then the round hits the pan face down until the meat is browned, and ready to receive toppings of diced tomato and creamy tzatziki. Toss a second tomato with curly leaf lettuce and a red wine vinaigrette.

  • 30ml Red wine vinegar
  • 60g Garlic-cucumber yogurt (tzatziki)
  • 2 Artisanal pita
  • 10g Mediterranean Shores spices (paprika, garlic, salt, roasted garlic, black pepper, sun-dried tomato, tomato, red bell pepper, oregano, mustard, rosemary)

Preparation

Mise en place
Separate the lettuce leaves; tear the leaves. Medium-dice 1 tomato (double for 4 portions) and cut the remaining 1 into ½ inch wedges.

Prepare the smash gyro
In a large bowl, combine the beef, spices and S&P. Place the pita on a dry work surface. Spread evenly with the beef.

Cook the smash gyro
In a large pan (use 2 pans for speed), heat a drizzle of oil on medium. Working in batches, add the gyros, meat-sides down, and cook, 2 to 3 min., until the beef* is cooked through. Flip and cook, 1 to 2 min., until the pita have warmed through.

Make the salad
In a second large bowl, combine the lettuce, tomato wedges, vinegar, 2 tbsp oil (double for 4 portions) and S&P.

Finish & serve
In a small bowl, combine the diced tomato, a drizzle of oil and S&P. Divide the smash gyros between your plates. Top with the tzatziki and diced tomato. Serve the salad on the side. Bon appétit!
