This Japanese steakhouse sauce delivers not just one yum but two! This version uses sesame-rich tahini, paprika and lemon, for dunking in browned beef patties (slow-carb fortified with almond flour). Roasted zucchini and sweet pepper can take a dip too.

  • 1 Onion (or shallot)
  • 2 Green zucchini
  • 1 Sweet pepper
  • 15g Minced roasted garlic
  • 30g Almond flour
  • 15ml Tahini
  • 3g Sweet paprika

Preparation

Mise en place

  • Preheat the oven to 450°F.

  • Halve, core and cut the sweet pepper lengthwise into ½ inch pieces.

  • Halve the zucchini lengthwise; cut crosswise into ½ inch pieces on an angle.

  • Peel and cut the onion into ¼ inch wedges.

  • Halve the lemon; juice ½ and quarter the remaining ½.

Roast the vegetables

  • In a medium bowl, combine the zucchini, a drizzle of oil and S&P.

  • On a lined sheet pan, toss the sweet pepper and onion with a drizzle of oil and S&P.

  • Roast, flipping and adding the zucchini halfway, 16 to 18 min., until softened and browned.

Prepare the patties

  • Meanwhile, in a second medium bowl, combine the beef, almond flour, ½ the garlic, ⅔ of the paprika, 1 egg (double for 4 portions) and S&P.

  • Form into 6 patties (double for 4 portions).

Cook the patties

  • In a large pan, heat a drizzle of oil on medium-high.

  • Add the patties* and cook, 3 to 5 min. per side, until cooked through.

Make the yum yum sauce

  • In a small bowl, whisk the lemon juice, tahini, remaining garlic and paprika, a drizzle of oil and S&P.

Plate your dish

  • Divide the vegetables between your plates.

  • Top with the patties.

  • Drizzle with the yum yum sauce.

  • Garnish with the lemon wedges. Bon appétit!
