Talk about cutting the mustard. A perfect pairing for German-style beef patties, these potatoes are air-fried to golden and tossed with fresh dill, vinegar and whole-grain mustard. The side salad of fennel and apple slices is all about creating crisp contrast.

  • 450g Baby potatoes
  • 14g Dill
  • 1 Fennel bulb
  • 1 Apple
  • 20g Panko
  • 30ml Apple cider vinegar
  • 30ml Whole-grain mustard
  • 30ml Buttermilk

Preparation

Fry the potatoes

  • Preheat the air fryer to 400°F. Lightly oil the basket.

  • Pick the dill fronds off the stems; roughly chop the fronds.

  • Medium-dice the potatoes. In a medium bowl, toss with a drizzle of oil and S&P.

  • Place in the air fryer and fry, shaking halfway, 14 to 16 min., until browned and tender.

  • Return to the bowl and add ⅓ of the vinegar, ½ the mustard and ½ the dill; toss well.

Prepare & fry the patties

  • Meanwhile, in a second medium bowl, combine the beef, panko, remaining mustard, 1 egg (double for 4 portions) and S&P.

  • Form into 8 meatballs (double for 4 portions).

  • Lightly flatten into patties.

  • Place the patties* in the air fryer and fry, 9 to 11 min., until cooked through.

Make the salad

  • Meanwhile, halve and core the fennel bulb lengthwise; thinly slice crosswise.

  • Halve, core and thinly slice the apple.

  • In a large bowl, combine the fennel, apple, buttermilk, remaining dill and vinegar, a drizzle of oil and S&P.

  • Divide the potatoes, patties and salad between your plates. Bon appétit!
