Beef Cheeseburger Salad
with Special Sauce & Sesame Seed Garnish
With all the makings of a classic cheeseburger, this is the ultimate good times salad. Homemade special sauce with chopped cornichons is a highlight, and the garnish of sesame seeds and croutons is a wink to where it all started. Goodbye bun, hello fun!

- 250g Canadian-raised lean ground beef
- 1 Head of lettuce
- 1 Tomato
- 9g White sesame seeds
- 15ml Dijon mustard
- 16g Cornichons
- 25g Croutons
- 30ml Ketchup
- 30ml Apple cider vinegar
- 30ml Mayonnaise
- 30g Grated Monterey Jack
- 8g Montréal Steak House spices (sea salt, spices, onion, garlic, mustard, coriander seeds, thyme, canola oil)

Preparation

Cook the beef
- In a large pan, heat a drizzle of oil on medium-high.
- Add the beef*; season with the spices.
- Cook, breaking up the meat, 4 to 6 min., until cooked through.

Mise en place
- Meanwhile, mince the cornichons.
- Medium-dice the tomato.
- Roughly chop the lettuce.

Make the special sauce
- In a small bowl, combine the mayo, ketchup, cornichons, ½ the mustard, ⅓ of the vinegar and S&P.

Make the salad & serve
- In a large bowl, whisk the remaining mustard and vinegar (start with ½ the vinegar), 2 tbsp oil (double for 4 portions) and S&P.
- Add the lettuce, tomato and croutons; toss well.
- Divide the salad between your plates.
- Top with the beef.
- Garnish with the cheese and sesame seeds.
- Serve the special sauce on the side. Bon appétit!
