Beef Bibimbap
with Sesame-Roasted Veggies
To bibimbap or not to bibimbap, that is the question! For family dinner, the answer is clear: tasty morsels of Korean-spiced beef over warm rice are guaranteed to hit the spot. Roasted edamame, cabbage and broccoli boost the cozy even more.

- 510g Canadian-raised lean ground beef
- 1 Head of broccoli
- 2 Scallions
- 150g Shredded cabbage
- 320g Jasmine rice
- 15ml Toasted sesame oil
- 60ml Sweet chili sauce
- 150g Edamame (or green peas)
- 24g Mellow Sesame spices (brown sugar, sea salt, white sesame, garlic, canola oil, ginger, paprika flavour, black pepper, cellulose)

Preparation

Cook the rice
- Preheat the oven to 450°F.
- In a medium pot, combine the rice, 3 cups water and a big pinch of salt; bring to a boil.
- Reduce the heat, cover and simmer, 14 to 16 min., until the rice is tender and the water has been absorbed.
- Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Start the vegetables
- Meanwhile, cut the broccoli head into bite-size florets.
- On a lined sheet pan, toss with a drizzle of oil and ½ the spices.
- Roast, 8 min., until partially cooked.

Finish the vegetables
- Meanwhile, in a small bowl, combine the edamame and ½ the sesame oil.
- In a medium bowl, combine the cabbage, a drizzle of oil and ¼ of the remaining spices.
- When the broccoli is partially cooked, stir and add the edamame and cabbage.
- Roast, 6 to 8 min., until the vegetables are tender.

Cook & coat the beef
- Meanwhile, in a large pan, heat a drizzle of oil on medium-high.
- Add the beef*; season with the remaining spices.
- Cook, breaking up the meat, 4 to 6 min., until cooked through.
- Add the chili sauce and remaining sesame oil. Cook, stirring often, 30 sec. to 1 min., until combined.

Mise en place
- Meanwhile, thinly slice the scallions crosswise.

Plate your dish
- Divide the rice between your bowls.
- Top with the vegetables and beef.
- Garnish with the scallions. Bon appétit!
