We’ve got all the elements for an easygoing evening. What we love about this recipe is how it brings together the familiarity of burgers with the faraway flavours of Thailand. Ground pork patties are livened up with sesame-ginger spices and a dose of yellow curry paste. They’re delightful on grilled hamburger buns with a smear of lime-zested mayo and quick-pickled strips of daikon (conveniently pre-cut). Pair them with barbecued carrots that handle like fries.

  • 150g Matchstick daikon
  • 1 Lime
  • 90ml Mayonnaise
  • 18g Mild yellow curry paste
  • 2 Classic hamburger buns
  • 8g Sugared Sesame spices (sea salt, brown sugar, white sesame seeds, garlic, sunflower oil, ginger, black pepper, sugar)

Preparation

Grill the carrots
Heat the BBQ on high, making sure to oil the grill first. Halve the carrots lengthwise (quarter if large). In a large bowl, combine the carrots, a drizzle of oil, ½ the spices and S&P. Add to the BBQ (or to a grill pan heated on medium-high) and grill, turning occasionally, 9 to 12 min., until tender. Transfer to a plate and reserve the grill pan, if using.

Prepare the patties
Meanwhile, in a medium bowl, combine the pork, curry paste and all but a pinch of the remaining spices. Form into 2 patties (double for 4 portions).

Make the pickled daikon
Zest and juice the lime. In a second medium bowl, combine the daikon, lime juice, remaining spices and S&P.

Grill the patties & buns
Add the patties* to the BBQ (or to the reserved grill pan heated with a drizzle of oil on medium-high) and grill, 3 to 5 min. per side, until cooked through. Transfer to a plate. Add the buns, cut-sides down, to the BBQ (or to the same grill pan heated on medium-high) and grill, 1 to 2 min., until lightly toasted. Transfer to a plate.

Make the lime mayo
In a small bowl, combine the mayo, lime zest and S&P.

Finish & serve
Spread the cut-sides of the buns with ½ the lime mayo. Divide the carrots and bun bottoms between your plates. Top each bun bottom with a patty, the pickled daikon (drain before adding) and a bun top. Serve the remaining lime mayo on the side. Bon appétit!
