BBQ Tandoori Pork Chops
over Minty Salad with Yogurt-Lime Dressing
You’ll want to set the table outside for this carb-savvy supper! Bold and bright with tandoori spices, these grilled chops meet full-on freshness with a crisp salad tossed in a thick, cool and creamy yogurt dressing, garnished with mint and lime.

- 2 Pork chops
- 1 Lime
- 100g Radishes
- 120g Baby greens (lettuce mix, baby spinach, kale or arugula)
- 1 Garlic clove
- 14g Mint
- 2 Cucumbers
- 100g Greek yogurt
- 8g Tandoori Trip spices (garlic purée, sea salt, paprika, ginger purée, coriander, Kashmiri chili powder, cumin powder, mint flakes, turmeric, black peppercorn, fennel seeds, coriander seeds, cinnamon, star anise, cumin seeds)

Preparation

Grill the pork
- Heat the BBQ on high (or pan on medium-high), making sure to oil the grill first.
- Mince the garlic.
- Pat the pork* dry; rub with the spices, ¼ of the garlic and a drizzle of oil.
- Add to the BBQ (or pan) and grill, 3 to 5 min. per side, until cooked through.
- Transfer to a cutting board and let rest before slicing.

Mise en place
- Meanwhile, halve the lime; juice ½ and quarter the remaining ½.
- Thinly slice the radishes.
- Pick the mint leaves off the stems; roughly chop the leaves.
- Thinly slice the cucumbers crosswise.

Make the dressing & salad
- In a small bowl, whisk the yogurt, lime juice, remaining garlic, 1 to 2 tbsp water (until you achieve your desired consistency, double for 4 portions) and S&P.
- In a large bowl, combine the radishes, baby greens, cucumbers, ½ the mint and ½ the dressing.

Plate your dish
- Divide the salad between your plates.
- Top with the pork.
- Drizzle with the remaining dressing.
- Garnish with the remaining mint and the lime wedges. Bon appétit!
