Bacon 'n' Peas Spaghetti
with Roasted Brussels Sprouts
Aglio means garlic and olio means oil. Put the two together and you’ve got a classic Naples pasta. Add nibbles of crisp bacon and sweet green peas, and you've got a new family classic that’ll please everyone from here to the Italian coast.

- 30ml Minced garlic
- 500g Brussels sprouts
- 150g Green peas
- 450g Spaghetti
- 50g Grana Padano (contains rennet)
- 10g Garlic & Sweet Pepper spices (sugar, garlic, red pepper bell, vinegar powder, yeast extract, green pepper bell, salt, canola oil, paprika, cellulose, turmeric, Cayenne pepper, citric acid)

Preparation
Roast the Brussels sprouts
- Preheat the oven to 450°F. Bring a large pot of salted water to a boil.
- Halve the Brussels sprouts lengthwise.
- On a lined sheet pan, toss with a drizzle of oil, the spices and S&P.
- Roast, stirring halfway, 12 to 14 min., until golden brown and tender.
Boil the pasta
- Meanwhile, add the pasta to the pot of boiling water; stir gently to separate.
- Boil, 10 to 12 min., until al dente.
- Reserving ½ cup cooking water, drain and toss with a drizzle of oil to prevent sticking.
Make the sauce
- Meanwhile, small-dice the bacon.
- In a large, high-sided pan, heat a drizzle of oil on medium-high.
- Add the bacon* and cook, stirring occasionally, 4 to 7 min., until beginning to brown.
- Reduce the heat to medium and add the garlic. Sauté, 30 sec. to 1 min., until fragrant.
Combine the pasta
- To the pan, add the pasta, peas and ½ the reserved cooking water. Cook, stirring occasionally, 2 to 3 min., until combined and warmed through.
- Add ½ the cheese; toss well.
- If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency; season with S&P.
Plate your dish
- Divide the pasta between your bowls.
- Sprinkle with the remaining cheese.
- Serve the Brussels sprouts on the side. Bon appétit!
