It’s mellow and yellow, it’s creamy and dreamy, and boy is it quick. Cook up this appealing pasta dinner in 10 minutes, and you’ll have the rest of the evening to chow down and chillax. Coat al dente cheese tortellini packages in a creamy sauce studded with freshly shaven corn niblets and crisp string beans (boiled in the pasta water, because smart!). Create contrast with crushed croutons and you’ve got it made.

Boil the pasta & string beans
Bring a medium pot of salted water to a boil. Remove the stem ends of the string beans; cut into thirds. Add the pasta to the pot of boiling water; stir gently to separate. Boil, stirring occasionally, 4 to 6 min., until al dente. In the final 2 to 3 min., add the string beans. Reserving ½ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.

Meanwhile, cut the corn kernels off the cob (shuck if necessary). Lightly crush the croutons into large crumbs. In a small bowl, make the pangrattato by combining the croutons, a drizzle of oil and a pinch of the spices.

Make the sauce
In a large pan, heat a drizzle of oil on medium-high. Add the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the corn, nutritional yeast, cream, remaining spices and ½ the reserved cooking water. Cook, stirring frequently, 1 to 2 min., until combined; season with S&P.

Combine the pasta
To the pan of sauce, add the pasta, string beans and S&P. Cook, stirring frequently, 1 to 2 min., until warmed through and combined. If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.

Plate your dish
Divide the pasta between your plates. Top with the pangrattato. Bon appétit!
