10-Minute Cheese Tortellini
with Creamy Sweet Pepper Sauce, Cashews & Lemon
You can trust fresh tortellini to get you from zero to hero in no time. Just 10 minutes of cooking time sees these three-cheese pasta packages boiled to al dente, smartly sauced and ready for action. Slivers of sweet pepper create contrast and a scattering of cashews add bite. Mouthful after mouthful, you’ll enjoy how lemon juice brings in the zing while a touch of cream smooths it out. Preparation

Boil the pasta
Bring a medium pot of salted water to a boil. Add the pasta; stir gently to separate. Boil, stirring occasionally, 4 to 6 min., until al dente. Reserving ½ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.

Mise en place
Meanwhile, core and thinly slice the sweet pepper. Halve the lemon; juice ½ and cut the remaining ½ into 2 wedges.

Make the sauce
In a large pan, heat a drizzle of oil on medium. Add the garlic and sauté, 1 to 2 min., until fragrant. Add the sweet pepper, cream, demi-glace, spices and ½ the reserved cooking water. Cook, stirring constantly, 1 to 2 min. (2 to 3 min. for 4 portions), until beginning to thicken. Add ½ the lemon juice, 2 tbsp butter (double for 4 portions) and S&P; stir well.

Combine the pasta & serve
To the pan of sauce, add the pasta; stir well. If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency. Divide the pasta between your bowls. Garnish with the cashews and lemon wedges. Bon appétit!
