Speedy Cheese Tortellini with Roasted Red Pepper Sauce

Presto! It’s magico! Conjure up a speedy and satisfying supper with our fresh tortellini. These quick-cooking pasta packages, filled with three kinds of cheese, are ready for any trick we’ve got up our sleeve. So start the sauce with a flavour shortcut from roasted red pepper spread and finish it with butter for smoothness. Midway through, add lots of string peas and beans for a bright green edge of veg.

- 100g String peas (snow peas or sugar snap peas)
- 300g String beans
- 30ml Roasted red pepper spread
- 350g Fresh three-cheese tortellini (contains lipase)
- 30ml Vegetable demi-glace
- 25g Grana Padano (contains rennet)
- 10g Garlic & Sweet Pepper spices (salt, garlic, sugar, red bell pepper, vinegar powder, green bell pepper, sunflower oil, paprika, turmeric, cayenne pepper)

Preparation

Boil the pasta & vegetables
Bring a medium pot of salted water to a boil. Remove the stem ends of the string beans and string peas; cut into thirds. Add the pasta to the pot of boiling water; stir gently to separate. Boil, stirring occasionally, 4 to 6 min., until al dente. In the final 2 to 3 min., add the string beans and string peas. Reserving 1 cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.

Make the sauce
Meanwhile, in a large pan, heat a drizzle of oil on medium-high. Add the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the roasted red pepper spread, demi-glace and ½ the reserved cooking water. Cook, stirring occasionally, 2 to 3 min., until combined; season with the spices and S&P.

Combine the pasta
To the pan of sauce, add the pasta and vegetables. Cook, stirring frequently, 1 to 2 min., until heated through and combined. If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency. Off the heat, add 2 tbsp butter (double for 4 portions) and S&P; stir well.

Plate your dish
Divide the pasta between your bowls. Garnish with the cheese. Bon appétit!
