The spiced pork is pre-cooked so it can conveniently fold into tortillas with caramelized onions and melted cheese. All you have to do is create contrast by tossing together a crisp slaw of cabbage and radishes dressed with lime sour cream.

  • 60g Grated mozzarella
  • 6 Wheat flour tortillas
  • 30ml Lime juice

Preparation

Warm the pork

  • Preheat the oven to 450°F.

  • In a medium bowl, microwave the pork, 1 to 2 min., until warmed through.

  • Shred into small pieces.

Prepare & bake the quesadillas

  • Place the tortillas on a dry work surface.

  • Top half of each tortilla with the pork, onions and cheese. Fold in half and press lightly.

  • Arrange on a lined sheet pan drizzled with oil and drizzle the quesadillas with oil. Lightly flatten to keep intact.

  • Bake, flipping halfway, 12 to 14 min., until beginning to brown.

Make the lime sour cream & slaw

  • Meanwhile, thinly slice the radishes.

  • In a small bowl, combine the sour cream, lime juice (start with ½) and S&P.

  • In a second medium bowl, combine the cabbage, radishes, 2 tbsp of the lime sour cream (double for 4 portions), a drizzle of oil and S&P.

Plate your dish

  • Divide the quesadillas and slaw between your plates.

  • Drizzle the quesadillas with the remaining lime sour cream. Bon appétit!
