Preparation

Roast the broccoli

  • Preheat the oven to 450°F.

  • Cut the broccoli heads into bite-size florets.

  • On a lined sheet pan, toss with a drizzle of oil and S&P.

  • Roast, stirring and adding ¼ of the cheese halfway, 14 to 18 min., until tender.

Boil the pasta

  • Meanwhile, bring a large pot of salted water to a boil.

  • Add the pasta; stir gently to separate.

  • Boil, 10 to 12 min., until al dente.

  • Reserving 1 cup cooking water, drain and toss with a drizzle of oil to prevent sticking.

Microwave the corn

  • Meanwhile, cut the corn kernels off the cobs.

  • In a medium bowl, toss with a drizzle of oil and S&P.

  • Cover tightly with plastic wrap.

  • Microwave, 4 to 5 min., until softened.

Make the sauce

  • Meanwhile, mince the garlic.

  • In a large, high-sided pan, heat 3 tbsp butter on medium.

  • Add the garlic and spices. Cook, stirring often, 1 to 2 min., until a paste forms.

  • Add the milk and cook, whisking often, 30 sec. to 1 min., until thickened and no lumps remain.

Combine the pasta

  • To the pan, add the pasta and corn. Cook, stirring often, 1 to 2 min., until heated through and combined.

  • Add the remaining cheese and cook, stirring often, 30 sec. to 1 min., until the cheese has melted; season with S&P.

  • If the sauce seems dry, gradually add the reserved cooking water until you achieve your desired consistency.

Plate your dish

  • Divide the pasta between your bowls.
