Preparation

Sauté the vegetables & start the pork
Bring a medium pot of salted water to a boil. In a large pan, heat a generous drizzle of oil on medium-high. Add the mushrooms and cabbage. Sauté, 2 to 3 min., until beginning to caramelize. Add the pork; season with the spices and S&P. Cook, breaking up the meat, 3 to 5 min., until browned and partially cooked.

Boil the noodles
Meanwhile, add the noodles to the pot of boiling water and boil, 6 to 8 min., until al dente. Drain and toss with a drizzle of oil to prevent sticking.

Mise en place
Meanwhile, thinly slice the scallion crosswise. Roughly chop the kimchi.

Finish the pork & combine the noodles
To the pan of vegetables and pork, add the noodles, kimchi, vinegar, soy sauce and 2 tbsp water (double for 4 portions). Cook, stirring frequently, 1 to 2 min., until the pork* is cooked through and the noodles are coated.

Plate your dish
Divide the noodles between your bowls. Garnish with the scallion. Bon appétit!
*Health Canada recommends cooking ground pork to a minimum internal temperature of 71°C.
