Quick Saucy Ground Beef Lo Mein
with Fresh Noodles, Bok Choy & Carrots
High marks for lo effort! This super-quick meal is inspired by a Chinese cuisine classic. Fresh egg noodles are the departure point, boiled in the same pot as bok choy to save time and cleanup. With sesame-spiced beef and matchstick carrots, it’s ready in 15 mein-utes!

- 250g Canadian-raised lean ground beef
- 100g Matchstick carrots
- 225g Baby bok choy
- 15ml Minced garlic
- 30ml Ponzu lime sauce
- 15ml Toasted sesame oil
- 225g Fresh noodles
- 30ml Vegetable demi-glace
- 30ml Mirin
- 12g Mellow Sesame spices (brown sugar, sea salt, white sesame, garlic, canola oil, ginger, paprika flavour, black pepper, cellulose)

Preparation
Boil the noodles & bok choy
- Bring a medium pot of salted water to a boil.
- Remove the root ends of the bok choy; roughly chop.
- Add the noodles and bok choy to the pot of boiling water; stir gently to separate.
- Boil, 2 to 4 min., until al dente.
- Drain and toss with a drizzle of oil to prevent sticking.
Cook the carrots & beef
- Meanwhile, in a large pan, heat a drizzle of oil and the sesame oil on medium-high.
- Add the carrots and sauté, 1 to 2 min., until fragrant.
- Add the beef* and garlic; season with ⅔ of the spices. Cook, breaking up the meat, 4 to 6 min., until cooked through; season with S&P.
Combine the noodles
- To the pan, add the mirin, ponzu, demi-glace, 2 tbsp water (double for 4 portions) and S&P.
- Cook, stirring often, 1 to 2 min., until coated.
- Add the noodles and bok choy; toss well.
Plate your dish
- Divide the noodles between your bowls.
- Garnish with the remaining spices. Bon appétit!
