You’ll be seeing green on pizza night, in the best way possible. Garlic-sautéed leafy greens blended with cream cheese and olive-flecked seasonings are the first layer of lusciousness on rounds of naan. Gratings of white cheddar go over top to seal the deal in the oven. See how the salad tries to steal the show, tossing pleasantly bitter radicchio and toasted walnuts in a honey and sherry vinegar dressing.

Preparation

Sauté the spinach
Preheat the oven to 450°F. In a large pan, heat a drizzle of oil on medium-high. Add the garlic and sauté, 30 sec. to 1 min., until fragrant. Add ¾ of the spinach and sauté, 1 to 2 min., until wilted; season with the spices. Transfer to a cutting board to cool slightly. Wipe out and reserve the pan.

Assemble & bake the pizzas
Once cool enough, roughly chop the spinach. In a medium bowl, combine the sautéed spinach and cream cheese. Arrange the naan on a lined sheet pan. Spread with the spinach-cream cheese mixture. Top with the cheddar. Bake, rotating halfway, 6 to 8 min., until the cheese has melted.

Toast the walnuts
Heat the reserved pan on medium. Add the walnuts and toast, stirring frequently, 2 to 3 min., until lightly browned and fragrant. Transfer to a large bowl.

Make the salad
Quarter the radicchio; tear into bite-size pieces. To the bowl of walnuts, add the vinegar, honey, 2 tbsp oil (double for 4 portions) and S&P; stir well. Add the radicchio and remaining spinach; toss well.

Plate your dish
Divide the pizzas (cut into wedges) and salad between your plates. Bon appétit!
