Lahanosalata is a Greek mainstay in winter, which conveniently coincides with cabbage season. Toss the crisp shreds with cucumbers, toasted walnuts, honey and lemon juice for an easy breezy side salad to accompany lemon-infused rice and hot-from-the-stovetop herbed organic chicken breasts.

Preparation

Cook the rice

  • Juice the lemon.

  • In a medium pot, combine the rice, 1 ¼ cups water (double for 4 portions) and a big pinch of salt; bring to a boil.

  • Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed.

  • Remove from the heat and let sit, covered, for 5 min.

  • Add ⅓ of the lemon juice and fluff the rice.

Toast the walnuts

  • Meanwhile, heat a medium, dry pan on medium.

  • Add the walnuts and toast, stirring often, 2 to 3 min., until lightly browned and fragrant.

  • Transfer to a small bowl and reserve the pan.

Cook the chicken

  • Pat the chicken dry; season with all but a pinch of the spices and S&P.

  • In the reserved pan, heat a drizzle of oil on medium-high.

  • Add the chicken* and cook, partially covered, 4 to 6 min. per side, until cooked through.

Make the salad

  • Meanwhile, thinly slice the cucumbers crosswise.

  • In a medium bowl, whisk the honey, remaining lemon juice and spices, 2 tbsp oil (double for 4 portions) and S&P.

  • Add both types of cabbage, the cucumbers and walnuts; toss well.

Plate your dish

  • Divide the rice, chicken and salad between your plates. Bon appétit!
