Protein Swap | Salmon al Ajillo
with Sherry-Dressed Salad & Garlic Bread
The three most beautiful words in the Spanish language: salmón al ajillo, or salmon with garlic. Garnished with fresh parsley and lemon zest, all this deeply aromatic fish desires is a regionally appropriate salad and a side of buttery air-fried bread.

- 2 Sustainably-raised Atlantic salmon fillets (BAP-certified)
- 100g Radishes
- 1 Head of curly leaf lettuce
- 14g Parsley
- 1 Lemon
- 3 Garlic cloves
- 30ml Sherry vinegar
- 1 Garlic focaccia bun
- 10g A la Plancha spices (kosher salt, garlic, sugar, red bell pepper, vinegar powder, yeast extract, green bell pepper, sunflower oil, paprika, smoked paprika, silicon dioxide, turmeric, cayenne pepper, citric acid)

Preparation

Mise en place
- Preheat the air fryer to 375°F. Lightly oil the basket.
- Roughly chop the parsley leaves and stems.
- Zest and quarter the lemon.
- Thinly slice the radishes.
- Roughly chop the lettuce.
- Mince the garlic.
- Place 2 tbsp butter (double for 4 portions) in a small bowl to soften.
- In a medium bowl, microwave 2 tbsp butter (double for 4 portions) and ½ the garlic, in 15 sec. increments, until melted.

Fry the shrimp
- Pat the shrimp* dry (remove the shells from the tails if desired); rub with a drizzle of oil, the spices and S&P.
- Place in the air fryer and fry, 3 to 5 min., until opaque and cooked through.
- Transfer to the bowl of melted butter and add the lemon zest and parsley; toss well.

Make the salad
- Meanwhile, in a medium bowl, combine the lettuce, radishes, vinegar, 2 tbsp oil (double for 4 portions) and S&P.

Make the garlic bread
- To the bowl of softened butter, add the remaining garlic and S&P; stir well.
- Spread the cut-sides of the bun with the spiced butter.
- Working in batches if necessary, place the bun, cut-sides up, in the air fryer and fry, 1 to 2 min., until warmed through.

Plate your dish
- Divide the shrimp, salad and garlic bread between your plates.
- Garnish with the lemon wedges. Bon appétit!
