This Greek fast food classic always hits the spot. It takes 15 minutes to throw together satisfying pita sandwiches topped with seared chicken and a wonderfully fresh tomato and onion salad. A sprinkle of dried oregano drives the idea home.

  • 2 Canadian-raised chicken breasts (air chilled)
  • 1 Tomato
  • 1 Head of curly leaf lettuce
  • 50g Sliced red onions
  • 1g Dried oregano
  • 30ml Red wine vinegar
  • 90g Tzatziki or raita
  • 2 Pocketless pita
  • 7g Paprika & Oregano spices (garlic, paprika, beef broth powder (wheat and sulphites), salt, onion, dextrose, oregano, yeast extract, black pepper, canola oil, cellulose, thyme, parsley, cinnamon, nutmeg, citric acid)

Preparation

Cook the chicken

  • Pat the chicken dry; season with the spices and S&P.

  • In a large pan, heat a drizzle of oil on medium-high.

  • Add the chicken* and cook, partially covered, 2 to 3 min. per side, until cooked through.

Make the salad

  • Meanwhile, place the onions in a strainer and rinse under cold water.

  • Chop the lettuce.

  • Medium-dice the tomato.

  • In a medium bowl, combine the lettuce, tomato, onions, oregano, vinegar, a drizzle of olive oil and S&P.

Warm the pita

  • Wrap the pita in a slightly dampened paper towel. 

  • On a plate, microwave, in 10 sec. increments, until warm.

Plate your dish

  • Divide the pita between your plates.

  • Spread with the tzatziki.

  • Top with the chicken and a spoonful of the salad (tightly wrap the pita around the filling if desired).

  • Serve the remaining salad on the side. Bon appétit!
