- 60ml Heavy cream
- 10g A la Plancha spices (kosher salt, garlic, sugar, red bell pepper, vinegar powder, green bell pepper, sunflower oil, paprika, smoked paprika, turmeric, cayenne pepper)

Preparation

Boil the pasta
Bring a medium pot of salted water to a boil. Add the pasta; stir gently to separate. Boil, stirring occasionally, 4 to 6 min., until al dente. Reserving ½ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.

Mise en place
Meanwhile, core and thinly slice the sweet pepper lengthwise. Halve the lemon; juice ½ and cut the remaining ½ into 2 wedges.

Cook the beef
In a large pan, heat a drizzle of oil on medium-high. Add the beef*; season with S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through. Transfer to a bowl and reserve the pan.

Make the sauce
In the same pan, heat a drizzle of oil on medium. Add the garlic and sauté, 1 to 2 min., until fragrant. Add the sweet pepper, cream, demi-glace, spices and ½ the reserved cooking water. Cook, stirring constantly, 1 to 2 min. (2 to 3 min. for 4 portions), until beginning to thicken. Add ½ the lemon juice, 2 tbsp butter (double for 4 portions) and S&P; stir well.

Combine the pasta & serve
To the pan of sauce, add the pasta and beef; stir well. If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency. Divide the pasta between your bowls. Garnish with the cashews and lemon wedges. Bon appétit!
