Kids know that when you mix red and white, you get pink. Rosée sauce coats orecchiette pasta—little ears, in Italian—to perfection with a blend of tomato and cream. The picture is completed with roasted broccoli and a garnish of Grana Padano.

Preparation

Roast the broccoli

  • Preheat the oven to 450°F. Bring a large pot of salted water to a boil.

  • Cut the broccoli head into bite-size florets.

  • On a lined sheet pan, toss with a drizzle of oil, ½ the spices and S&P.

  • Roast, stirring halfway, 14 to 18 min., until tender.

Boil the pasta

  • Meanwhile, add the pasta to the pot of boiling water; stir gently to separate.

  • Boil, 9 to 11 min., until al dente.

  • Reserving 1 cup cooking water, drain and toss with a drizzle of oil to prevent sticking.

  • Reserve the pot.

  • Meanwhile, mince the garlic.

Make the sauce

  • In the reserved pot, heat a drizzle of oil on medium-high.

  • Add the garlic and sauté, 1 to 2 min., until fragrant; season with the remaining spices and S&P.

  • Add the tomato sauce, demi-glace, cream, ½ the reserved cooking water and S&P.

  • Simmer, 3 to 4 min., until thickened.

Combine the pasta & serve

  • To the pot, add the pasta and ½ the cheese.

  • Cook, stirring often, 2 to 3 min., until the pasta is coated and combined.

  • If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.

  • Divide the pasta between your bowls.

  • Top with the broccoli.

  • Garnish with the remaining cheese. Bon appétit!
