Keto: Pork & Mozzarella Meatballs Alla Pizzaiola
with Roasted Green Beans & Sweet Pepper
Cheesy on the outside, cheesy on the inside. These ground pork meatballs are packed and pumped with mozzarella cheese to really give your teeth something to sink into. (Our Olive Branch spice blend and a touch of nutritional yeast also bump up the flavour.) Serve them with roasted green beans and slices of sweet pepper, while a garnish of grated mozza melts over top the warm simmering tomato sauce, alla pizzaiola.

Preparation

Prepare the meatballs
Preheat the oven to 450°F. In a medium bowl, combine the pork, nutritional yeast, 1 egg (double for 4 portions), ½ the cheese, ⅔ of the spices and S&P. Form into 10 meatballs (double for 4 portions) about the size of a golf ball.

Cook the meatballs
In a medium pan, heat a drizzle of oil on medium-high. Add the meatballs* and cook, partially covered, turning occasionally, 8 to 10 min., until browned and cooked through.

Roast the vegetables
Meanwhile, remove the stem ends of the green beans. Core and cut the sweet pepper lengthwise into ½ inch pieces. On a lined sheet pan, toss with a drizzle of oil, the remaining spices and S&P. Roast, flipping halfway, 7 to 9 min., until browned and tender.

Make the sauce & coat the meatballs
Meanwhile, to the pan of meatballs, add the tomato sauce, 1 tbsp water (double for 4 portions) and S&P; bring to a boil. Reduce the heat to simmer and cook, stirring frequently, 2 to 3 min., until slightly reduced and the meatballs are coated.

Plate your dish
Divide the meatballs and vegetables between your plates. Spoon the sauce over. Garnish with the remaining cheese. Bon appétit!
