Gyro-Inspired Chicken Thighs
with Oven-Roasted Fries, Broccoli & Feta
Go from zero to gyro in half an hour! One of Greece’s most popular exports, this deliciously seasoned meat would have traditionally been cooked on a spit. Our version offers familiar elements streamlined for fun and flavour. Minced garlic, freshly squeezed lemon and our lively Mediterranean Shores blend go to work on chicken thighs. Serve them in slices with roasted broccoli, thick-cut potato fries and cubed feta, along with a taste of tzatziki, of course.

- 300g Broccoli florets
- 1 Garlic clove
- 1 Lemon
- 60g Garlic-cucumber yogurt (tzatziki)
- 30g Feta
- 10g Mediterranean Shores spices (paprika, garlic, salt, roasted garlic, black pepper, sun-dried tomato, tomato, red bell pepper, oregano, mustard, rosemary)

Preparation

Roast the fries
Preheat the oven to 450°F. Cut the potatoes into fries. On a lined sheet pan, toss with a drizzle of oil, ½ the spices and S&P. Roast, flipping halfway, 25 to 30 min., until lightly browned and tender.

Roast the broccoli
Meanwhile, on a second lined sheet pan, toss the broccoli (halve if large) with a drizzle of oil and S&P. Roast, stirring halfway, 14 to 18 min., until tender.

Mise en place
Meanwhile, quarter the lemon. Mince the garlic.

Cook & coat the chicken
Pat the chicken dry with paper towel; season with the remaining spices and S&P. In a large pan, heat a drizzle of oil on medium-high. Add the chicken* and cook, partially covered, 4 to 6 min. per side, until cooked through. Add the garlic and juice of 1 lemon wedge (double for 4 portions). Cook, stirring frequently, 1 to 2 min., until fragrant and the chicken is coated. Transfer to a cutting board and let rest for 5 min. before slicing against the grain.

Plate your dish
Divide the fries, broccoli and chicken between your plates. Garnish with the cheese and remaining lemon wedges. Serve the tzatziki on the side. Bon appétit!
