Greek-Inspired Nourish Bowls with Roasted Pepper & Feta
Bulgur, Roasted Broccoli & Tzatziki
Put these tasty vegetarian bowls together in 20 minutes, and supper is a feta accompli! The inspiration is all Greek to us, from the tzatziki lining each portion to the trademark cheese on top to the oregano-cumin-paprika seasoning mix that floats herby flavours in between. Feast on bulgur topped with oven-bronzed broccoli florets, roasted pepper, juicy cherry tomatoes and a salad of baby greens sparkling in an apple cider vinaigrette.

- 140g Cherry tomatoes
- 200g Broccoli florets
- 90g Baby greens (lettuce mix, baby spinach, kale or arugula)
- 30ml Apple cider vinegar
- 1 Roasted pepper
- 80g Bulgur
- 60g Garlic-cucumber yogurt (tzatziki)
- 60g Feta
- 10g Greek Empire spices (garlic, cumin, paprika, oregano, salt, black pepper, basil)

Preparation

Roast the broccoli
Preheat the oven to 450°F. On a lined sheet pan, toss the broccoli (halve if large) with a drizzle of oil, ⅔ of the spices and S&P. Roast, stirring halfway, 14 to 18 min., until tender.

Cook the bulgur
Meanwhile, in a medium pot, combine the bulgur, ¾ cup water (double for 4 portions) and a big pinch of salt; bring to a boil. Reduce the heat, cover and simmer, 6 to 8 min., until the bulgur is tender and the water has been absorbed. Fluff and keep warm.

Mise en place
Meanwhile, halve the tomatoes. Thinly slice the roasted pepper.

Make the vinaigrette
In a small bowl, combine the vinegar, 2 tbsp oil (double for 4 portions), the remaining spices and S&P.

Finish & serve
In a large bowl, make the salad by combining the baby greens and ⅓ of the vinaigrette. In a second small bowl, combine the tomatoes and S&P. Divide the tzatziki between your bowls and spread out in a circular motion. Top with the bulgur, salad, tomatoes, roasted pepper and broccoli. Garnish with the cheese. Drizzle with the remaining vinaigrette. Bon appétit!
