They may be mini in size but keto-loaves are big on protein, with a garlicky mix of ground beef and creamy feta. Browned slices rest over roasted zucchini along with leafy greens melting into sun-dried tomatoes for residual sweetness. It’s topped off with a taste of tzatziki.

Preparation

Prepare & roast the meatloaves

  • Preheat the oven to 450°F.

  • In a large bowl, combine the beef, cheese, ½ the garlic and ½ the spices.

  • Form into 2 small loaves* (double for 4 portions).

  • Arrange on a lined sheet pan and roast, 15 to 18 min., until cooked through.

Cook the spinach & tomatoes

  • Meanwhile, in a large pan, heat a drizzle of oil on medium.

  • Add the remaining garlic and sauté, 30 sec. to 1 min., until fragrant.

  • Add the spinach and tomatoes.

  • Cook, partially covered, stirring occasionally, 2 to 3 min., until wilted and warmed through; season with S&P.

Roast the zucchini

  • Meanwhile, halve the zucchini lengthwise; cut crosswise into ½ inch pieces on an angle.

  • On a second lined sheet pan, toss with a drizzle of oil, the remaining spices and S&P.

  • Roast, flipping halfway, 7 to 9 min., until browned and tender.

Plate your dish

  • Divide the zucchini, spinach and tomatoes between your plates.

  • Top with the meatloaves (slice beforehand if desired).

  • Serve the tzatziki on the side. Bon appétit!
