Feta-Stuffed Beef Mini Meatloaves
with Sun-Dried Tomatoes & Tzatziki
They may be mini in size but keto-loaves are big on protein, with a garlicky mix of ground beef and creamy feta. Browned slices rest over roasted zucchini along with leafy greens melting into sun-dried tomatoes for residual sweetness. It’s topped off with a taste of tzatziki.

- 2 Green zucchini
- 15ml Minced garlic
- 30g Sliced sun-dried tomatoes
- 60g Garlic-cucumber yogurt (tzatziki)
- 60g Feta
- 7g Paprika & Oregano spices (garlic, paprika, beef broth powder (wheat and sulphites), salt, onion, dextrose, oregano, yeast extract, black pepper, canola oil, cellulose, thyme, parsley, cinnamon, nutmeg, citric acid)

Preparation
Prepare & roast the meatloaves
- Preheat the oven to 450°F.
- In a large bowl, combine the beef, cheese, ½ the garlic and ½ the spices.
- Form into 2 small loaves* (double for 4 portions).
- Arrange on a lined sheet pan and roast, 15 to 18 min., until cooked through.
Cook the spinach & tomatoes
- Meanwhile, in a large pan, heat a drizzle of oil on medium.
- Add the remaining garlic and sauté, 30 sec. to 1 min., until fragrant.
- Add the spinach and tomatoes.
- Cook, partially covered, stirring occasionally, 2 to 3 min., until wilted and warmed through; season with S&P.
Roast the zucchini
- Meanwhile, halve the zucchini lengthwise; cut crosswise into ½ inch pieces on an angle.
- On a second lined sheet pan, toss with a drizzle of oil, the remaining spices and S&P.
- Roast, flipping halfway, 7 to 9 min., until browned and tender.
Plate your dish
- Divide the zucchini, spinach and tomatoes between your plates.
- Top with the meatloaves (slice beforehand if desired).
- Serve the tzatziki on the side. Bon appétit!
