Preparation

Roast the fries
- Preheat the oven to 450°F.
- Cut the potatoes into fries.
- On a lined sheet pan, toss with a drizzle of oil, ½ the spices and S&P.
- Roast, flipping halfway, 25 to 30 min., until lightly browned and tender.
- Sprinkle with the Grana Padano.

Mise en place
- Meanwhile, thinly slice the tomatoes.
- Halve the lettuce lengthwise; tear the leaves (or thinly slice crosswise).
- Finely chop the cornichons.

Prepare & cook the patties
- In a large bowl, combine the beef, all but a pinch of the remaining spices and S&P. Form into 4 patties.
- In a large pan, heat a drizzle of oil on medium-high.
- Add the patties* and cook, partially covered, occasionally pressing down with a spatula, 2 to 3 min. per side, until browned and cooked through.
- Top with the cheddar.
- Cook, partially covered, 1 to 2 min., until melted.
- Transfer to a plate.

Toast the buns
- Arrange the buns, cut-sides up, on a second lined sheet pan.
- Toast in the oven, 3 to 4 min., until golden brown.

Make the mac sauce
- Meanwhile, in a small bowl, combine the mayo, cornichons, ketchup, 1 tsp water, the remaining spices and S&P.

Make the salad & serve
- Divide the bun bottoms and fries between your plates.
- Top each bun bottom with a spoonful of the mac sauce, a patty, the tomatoes, a handful of the lettuce and a bun top.
- In a large bowl, combine the vinegar and 3 tbsp oil. Add the remaining lettuce and S&P; toss well.
- Serve the salad and remaining mac sauce on the side. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
