Thick and slappy udon are the right fit for slurping and twirling, and they’ve got loads of browned ground beef to go with them. Tender-crisp bok choy and strips of sweet peppers keep the vegetable intake on the up and up. Everything gets super-duper saucy with flavours of teriyaki and sweet pineapple chili—in 10 minutes.

Cook the beef
Bring a large pot of salted water to a boil. Halve, peel and thinly slice the shallot. In a large, high-sided pan, heat a drizzle of oil on medium-high. Add the beef; season with S&P. Cook, breaking up the meat, 2 to 3 min., until partially cooked. Add the shallot and garlic. Cook, stirring frequently, 2 to 3 min., until fragrant and the beef* is cooked through.

Boil the noodles
Meanwhile, add the noodles to the pot of boiling water; stir gently to separate. Boil, 6 to 8 min., until al dente. Drain and toss with a drizzle of oil to prevent sticking.

Meanwhile, remove the root ends of the bok choy; roughly chop. Halve, core and thinly slice the sweet peppers lengthwise.

Make the stir-fry
To the pan of beef, add the sweet peppers, bok choy and S&P. Cook, partially covered, stirring occasionally, 3 to 4 min., until softened. Add the noodles, teriyaki glaze, pineapple chili sauce, demi-glace and 2 tbsp water. Cook, stirring frequently, 1 to 2 min., until combined.
