For an innovative take on ground beef patties, these browned kefta are spiced with sumac, sesame and citrus zest, before joining a superb supporting cast. Protein-heavy chickpeas, crisp kohlrabi and radishes share the stage, with help from lemon and tahini in the wings.

  • 100g Radishes
  • 1 Garlic clove
  • 30g Almond flour
  • 540ml Chickpeas (canned)
  • 30ml Tahini
  • 12g Lovely Levant spices (sumac, sesame seeds, oregano, basil, thyme, savory, lemon zest, marjoram, kosher salt)

Preparation

Roast the vegetables

  • Preheat the oven to 450°F.

  • Peel and small-dice the kohlrabi.

  • Quarter the radishes.

  • Drain and rinse the chickpeas.

  • On a lined sheet pan, toss with a drizzle of oil, ¾ of the spices and S&P.

  • Roast, stirring halfway, 18 to 22 min., until the chickpeas are crisp and the vegetables are tender.

  • Meanwhile, juice the lemon.

  • Mince the garlic.

Prepare & cook the kefta

  • In a medium bowl, combine the beef, garlic, almond flour, remaining spices, 1 egg (double for 4 portions) and S&P.

  • Form into 4 oval-shaped patties (double for 4 portions).

  • In a medium pan, heat a drizzle of oil on medium-high.

  • Add the patties* and cook, partially covered, 2 to 3 min. per side, until browned and cooked through.

Make the dressing

  • Meanwhile, in a small bowl, combine the tahini, lemon juice, a drizzle of oil and S&P.

  • If the sauce seems thick, gradually add up to 2 tbsp water until you achieve your desired consistency.

Plate your dish

  • Divide the vegetables between your plates.

  • Top with the kefta.

  • Drizzle with the dressing. Bon appétit!
