Beef Kefta with Lemon-Tahini Dressing
over Falafel-Spiced Chickpeas & Kohlrabi
For an innovative take on ground beef patties, these browned kefta are spiced with sumac, sesame and citrus zest, before joining a superb supporting cast. Protein-heavy chickpeas, crisp kohlrabi and radishes share the stage, with help from lemon and tahini in the wings.

- 250g Canadian-raised lean ground beef
- 1 Kohlrabi
- 1 Lemon
- 100g Radishes
- 1 Garlic clove
- 30g Almond flour
- 540ml Chickpeas (canned)
- 30ml Tahini
- 12g Lovely Levant spices (sumac, sesame seeds, oregano, basil, thyme, savory, lemon zest, marjoram, kosher salt)

Preparation
Roast the vegetables
- Preheat the oven to 450°F.
- Peel and small-dice the kohlrabi.
- Quarter the radishes.
- Drain and rinse the chickpeas.
- On a lined sheet pan, toss with a drizzle of oil, ¾ of the spices and S&P.
- Roast, stirring halfway, 18 to 22 min., until the chickpeas are crisp and the vegetables are tender.
Mise en place
- Meanwhile, juice the lemon.
- Mince the garlic.
Prepare & cook the kefta
- In a medium bowl, combine the beef, garlic, almond flour, remaining spices, 1 egg (double for 4 portions) and S&P.
- Form into 4 oval-shaped patties (double for 4 portions).
- In a medium pan, heat a drizzle of oil on medium-high.
- Add the patties* and cook, partially covered, 2 to 3 min. per side, until browned and cooked through.
Make the dressing
- Meanwhile, in a small bowl, combine the tahini, lemon juice, a drizzle of oil and S&P.
- If the sauce seems thick, gradually add up to 2 tbsp water until you achieve your desired consistency.
Plate your dish
- Divide the vegetables between your plates.
- Top with the kefta.
- Drizzle with the dressing. Bon appétit!
